Job Description:
We are seeking a Sushi Chef to join a new project at 103 2nd
Avenue with a focus on seasonal ingredients and best-in-class
standards for quality and service.
- Manage the sushi team, oversee cost control, labor management
and bottom-line profitability.
- Lead with a professional approach, train staff in proper
kitchen operations and set objectives.
- Maximize sales, optimize profits and ensure the sushi concept
operates at or above standards.
- Maintain high standards in security, safety, cleanliness and
sanitation, conduct regular department walkthroughs and random food
tastings.
- Monitor cleaning and maintenance of kitchen equipment, train
staff in proper sanitation procedures and ensure serve-safe
food.
- Establish prep levels, portion sizes and controls, develop a
hands-on approach and be involved in daily production.
- Source good, organic, seasonal products, oversee equipment
purchases and ensure equipment is fixed in a safe and timely
manner.
- Enforce quality standards, promote high standards in safety,
security and sanitation, and enforce Health Department rules and
regulations.
- Assist with staffing levels, employee files and disciplinary
incidents.
- Minimum 3 years kitchen management experience in an upscale
setting.
- Superior technical and natural cooking abilities, professional
leadership approach and ability to multi-task in a fast-paced
environment.
- Effective communication and interpersonal skills, high
standards for cleanliness and ability to work in an ever-changing
environment.
- Strong work ethic, customer-focused approach and ability to
perform duties of all kitchen positions.
- Valid NYC Food Handlers Certificate and strong knowledge of
opening and closing procedures.
- Ability to work independently, produce accurate monthly
inventories and work a flexible schedule.
