Job Description:
This role is ideal for a culinary professional with a refined
background in high-end cuisine who can bring precision, creativity,
and a mastery of both cold dishes and sushi techniques.
- Key Qualifications:
- Proven experience in fine dining, particularly in garde manger
and sushi preparation.
- Strong knife skills, a keen eye for detail, and an artistic
approach to plating.
- Knowledge of high-quality ingredients and seasonality, with a
focus on freshness and presentation.
- Ability to manage mise en place, inventory, and daily prep for
cold and sushi stations.
- Excellent team collaboration skills, with a commitment to
upholding fine dining standards.
- Responsibilities:
- Execute all cold kitchen and sushi station operations, ensuring
the quality and consistency of every dish.
- Collaborate closely with the Executive Chef to develop
innovative and visually appealing cold dishes and sushi
offerings.
- Train and supervise junior kitchen staff to maintain efficiency
and high standards.
- Monitor inventory and assist with ordering to keep operations
within budget and minimize waste.
